"Smoked Turkey Pasta Salad"

This simple and fast pasta salad can be prepared in advance and refrigerated until ready to serve. The smoked turkey gives it an imaginative flair!
INGREDIENTS:
8 oz. uncooked Ditalini pasta (small tubes)
6 oz. Boneless Skinless Smoked Turkey OR Chicken Breast, cut into strips
1 15oz. Can Light Kidney Beans, rinsed and drained
1/2 Cup thinly sliced Celery
1/4 Cup Chopped Red Onion
1/3 Cup Reduced Fat Mayonnaise
2 Tablespoons Balsamic Vinegar
2 Tablespoons Chopped Fresh Chives OR Green Onion
1 Tablespoon Fresh Tarragon leaves
1 teaspoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon ground black pepper
Lettuce leaves, optional

WHAT YOU DO:
1. Cook pasta according to package directions, ommitting salt. Drain and rinse well under cold water until pasta is cool.
2. Combine pasta with turkey, beans, celery and onion in medium bowl.
Combine mayonnaise, vinegar, chives, tarragon, mustard, garlic and pepper in small bowl. Pour over pasta mixture; toss to coat evenly. Serve on lettuce leaves. Makes 7 One-Cup Servings.


"Pavaroddy's Marinated Antipasta"

INGREDIENTS:
1 Head Romaine Lettuce, cut up
1 Head Red Leaf Lettuce, cut up
1 Cucumber, Sliced Thin
1 Carrot, Peeled thin slices
1 Medium Red Onion, sliced thin
1/2 Pound Diced Mozzarella Cheese
1/4 Pound Sliced Pepperoni
1 Small Can Black Ripe Olives, Sliced
1 to 1 1/2 Cups of Your Favorite Vinagrette or Dressing

WHAT YOU DO:
Combine all ingredients. The fact that you
pre-marinated the salad will speed up the buffet line!
OPTIONS:
Add anchovies, garbanzo beans, be creative!
